Hello and welcome to The Vegan Corner. Not all sweets are created equal, and chocolate truffles are surely amongst the most delicious of all sweet preparations. These little bombs can deliver bags of flavour at every bite you take, and since they are quick to make too, there isn’t really a good reason not to give them a try. Unless obviously you never liked chocolate to begin with, but in that case I wonder why you clicked on the video. To begin with, finely chop the chocolate, mix it with the chopped nuts and set the mixture aside for later use. Next, place the dates, the cocoa powder, the coconut oil, the agave nectar, the vanilla extract and the pistachios into a food processor and blend the ingredients together until you obtain a sticky and shiny mass, which is in fact the final mixture for the truffles.

Place the mixture into a bowl and place it in the fridge to rest for 20 minutes before moving on. Once the time has elapsed, you can remove the mixture from the fridge and portion it into pieces of the desired size using a spoon. There isn’t really a perfect size for the truffles, but I can personally guarantee that aiming for golf ball-sized bites, is unlikely to bring you the results you want. Using a teaspoon, we managed to get about 20 truffles, which are much better than 2 golf ball-sized ones… or not! Once that’s done, you simply have to roll the portions into balls using your hands, dip them into the pistachio-chocolate coating, and place them onto a dish to complete the recipe. To get an even better consistency, place the finished truffles into the fridge for at least 30 minutes before serving. And here are the final truffles, coated to perfection and ready for you to attack them.

At this point you have two choices: eat them all by yourself and hide any evidence that they were ever made, or invite your friends or parents for a tea, and share the truffles with them.
